Chocolate Mousse

Chocolate Mousse

This delicious chocolate mousse recipe was given to me by my friend Marian. It serves 6, but you can adjust the measurements to make more or less as you desire.

  • 300 g (12 oz.) dark chocolate, chopped
  • 3 eggs, separated
  • 1 1/2 cups of thickened cream
  • 6 tsp. castor sugar

  • Melt chocolate over a double boiler. You can use the microwave if you are careful and stir every 30 seconds.

  • To the chocolate add the egg yolks and cream and whisk until smoooth.

  • In a separate bowl, beat the egg whites until soft peaks form. Add the sugar and beat until dissolved.

  • Gently fold the egg white mixture into the chocolate mixture and scoop it into your chosen glasses or goblets. Chill in the refrigerator for several hours or overnight.

  • Top with cream, fresh berries, or grated chocolate (why not all three?), and serve.
